Granny Katherine's Coconut Cake

Granny Katherine's layered coconut cake is famous, and I am lucky enough to have spent a morning with her learning the secrets and tricks to making it.  I haven't used the recipe yet, and I doubt it will taste like hers...but I sure did enjoy the lesson...and the sweet memories we made together.
